A cake recipe for all foodies:

(*) For a small baking tray (28 cm x 20 cm). Makes 10-12 pieces.

Cream together butter and sugar, juice of one lemon and zest.

Fold in eggs. Mix flour with baking powder and gradually fold in. If it is too firm, fold in buttermilk or milk, as desired.

Rinse and peel the mangoes. Remove the flesh from the pit and cut into cubes. Remove the seeds from the dates and cut into long strips, mix with the mango pieces.

Preheat oven to 180 degrees. Grease a baking dish and dust with flour. Pour the batter into it. Spread the fruit evenly and sprinkle with pistachios. Bake in the oven for 45 minutes. Remove from the oven and turn out onto a wire rack. While still hot, cover with apricot jam.
