For the mango puree with cashew gnocchi, place the cashews in a small bowl and let stand covered with water for about 2 hours.

Drain through a sieve and allow to drain. Place cashews and 1 tablespoon coconut milk in a tall container and blend with a blender until creamy.

Add more coconut milk if necessary. Be careful not to make the mixture too soft!

Mix in vanilla sugar and grated lemon zest. Season with lemon juice and place in icebox for at least 1 hour.

Peel the mango, cut the pulp from the core and puree with a blender. From the cashew mixture with a spoon cut out gnocchi and serve the mango puree with cashew gnocchi.
