Try this delicious cake recipe. 1:

1. cut mangoes in thick slices from the stone. Beat eggs with lime zest, sugar, salt and milk. Combine flour with baking powder, stir in by tablespoonfuls. There should be no lumps, perhaps spread through a sieve. Stir in butter.

2. Melt 1 tsp. clarified butter in a small frying pan. Pour in 1/6 of the batter. Place 1/6 of the mango wedges on top in a circle.

Bake over medium heat for 6-8 minutes. Remove pancakes using a plate, add 1 tsp of lard to the frying pan and bake the pancake on the other side for 5 min. Bake a total of 6 portions, keeping the finished ones warm in the stove.

Dust the pancakes with powdered sugar and serve each with a scoop of lemon sorbet or ice cream.
