For the marble cake, line loaf pan with baking paper. Separate eggs and beat egg whites with half of the sugar until stiff.

Preheat oven to 160°C top and bottom heat. Beat the yolks with the remaining sugar and the vanilla sugar until foamy.

Add lemon juice, lemon zest and oil. Mix flour with baking soda and salt and add as well. Mix well. Add a little water if needed.

Gently fold in the snow. Pour 3 strips into the mold with half of the batter. Mix the other half with the cocoa and rum and pour between the white strips.

Using a skewer, carefully draw curls through the white and brown batter. Place pan in oven and bake for about 1 hour. Melt the couverture and coconut oil carefully, preferably in a water bath.

Mix with the baking aroma and coat the cooled marble cake with it.
