Instructions:

Cut meat into 1 cm thick and 4 cm long strips. Press the meat strips a little bit flat with the heel of your hand. For the marinade: remove the skin from the mango, cut the flesh from the stone and grind with the blender. Mix with the crushed salt, garlic, coriander and pepper. Pour over the meat. Cover and refrigerate for at least 120 minutes. Then strip off a small amount of the puree and place one or two strips of meat lengthwise in “waves” on metal skewers. Grill for five minutes on each side.
