Preparation (about 15 min):

Spread turkey ham thinly on plates and set aside to cool. Cut melons in half, remove core, cut out balls or dice (without peel). Mix all ingredients of the marinade well. Cut mint into thin strips, fold in and marinate for about ten minutes.

Spread the melons evenly in the center of the carpaccio and sprinkle with crumbled feta cheese, refine with ground pepper and garnish with redcurrant shoots. Serve with ciabatta.
