For the marinated pork belly, first cut the pork rind of the pork belly diagonally to the meat fiber at finger-width intervals.

For the marinade, peel and press garlic zehem, peel and grate ginger as well. Mix with sherry, soy sauce, sugar and pepper. Coat the meat – except the pork rind – with the marinade and let it marinate for 2 hours.

Heat the oil in a roasting pan, fry the pork belly with the pork rind down for 4 to 5 minutes, then turn the piece of meat to the other side. Peel and finely chop the onion. Add to the meat with the remaining marinade and place the roasting pan in the oven preheated to 175 degrees for 70 to 80 minutes.

Keep adding clear soup and baste the roast with the gravy. Remove from the oven, slice the marinated pork belly and serve.
