Cut the meat into fine strips. At the same time, remove the bones.

Peel and chop the onion.

Heat the lard and sauté the chopped onions until golden. Extinguish with a dash of vinegar.

Add the meat, fry briefly and season well with salt, pepper and marjoram.

Pour in some beef broth and simmer the meat, covered, at a low temperature until it is slowly tender.

Cook for about 1 1/2 hours, stirring repeatedly and adding more beef broth if necessary.

At the end, the juice should be fairly thickened. Stir the crème fraîche into the sauce, bring to the boil and continue cooking until the sauce has the desired thickness.
