For the marzipan sabayon, place the milk and marzipan in a container, bring to the boil together and then allow to cool.

Beat the yolks, sugar and the marzipan milk over a hot water bath until the mixture becomes foamy.

Remove from the water bath and continue beating for a few minutes.

Then add the amaretto and serve immediately.
