For the marzipan loin, carefully separate the eggs. Cream soft butter with yolks, sugar and vanilla sugar until very fluffy.

Mix flour with cocoa powder and grated almonds. Cut marzipan into very small cubes or pluck from the block and also mix into the flour.

Beat the egg whites until stiff and stir into the yolk mixture together with the flour-marzipan mixture.

Pour the dough into a greased and dusted loaf pan and bake at 180 degrees for about an hour.

After baking, let cool and spread with apricot jam.

Melt the chocolate in a bain-marie, add a little water, powdered sugar and grated almonds and immediately glaze the saddle of venison with it.

Decorate the marzipan saddle of venison with almond slivers, done.
