For the masala chai, cut the ginger into slices about 1/2 cm thick. Break the cinnamon stick and crush it coarsely with cloves and cardamom seeds in a mortar, put it in a pot and roast it while stirring on a medium flame until the spices start to smell.

Then add 500 ml water, ginger, milk and tea leaves and bring to a boil. Boil on medium flame for 3 minutes. Add amount of sugar as desired (it should be really sweet).

Drain the masala chai through a sieve and enjoy while still hot.
