For the mashed potatoes with melted onions, peel and wash the potatoes and cook them in water with a little salt for about 20 minutes. Slowly bring milk and whipping cream to a boil.

In the meantime, peel the onions and cut them into rings. Sauté the onion rings in enough butter and brown slightly.

Add 50 g of butter to the warm milk-whipped cream mixture and let it melt. Add the other 50 g butter to a saucepan and melt until you get a nut butter.

Drain the potatoes and simmer until dry, about 1 minute more. Mash the potatoes finely, mix in the milk-whipped cream mixture and the nut butter. Season the mashed potatoes with salt and nutmeg.

Arrange the mashed potatoes on preheated plates, add the melted onions with some melted butter over the mashed potatoes. Finally, sprinkle the mashed potatoes with melted onions with some chives.
