Instructions:

Sauté the onion and garlic in the clarified butter.

Add cumin powder, turmeric, coriander powder, brown sugar and chili powder and steam briefly, add chopped tomatoes (pellati) and water, reduce temperature, add red lentils. Cover and simmer on low heat for about 15 minutes. Add the finely chopped coriander leaves (or parsley). Season with salt, serve and garnish.
