Instructions:

Grind all the ingredients for the marinade in a spice grinder (blender) and blend to a smooth paste, dilute with the lard and juice mixture. Clean the fish, cut lengthwise and debone. Place bay leaves on top. Pour marinade over fish in shallow dish, cover again with bay leaves and refrigerate overnight. Best result: a grill with charcoal. Cover the grill with a banana leaf – alternatively aluminum foil. Place the fish on it and cook over low heat until it falls apart. In between, always brush with the marinade (if there is no grill, bake the fish in a baking dish for 45 – 60 minutes, also keep brushing with marinade. To serve, arrange fish on a platter and garnish with tomatoes and limes.
