Kofta: Grind garlic, ginger and salt to a paste. Mix all the spices with the mince and knead well. Form balls the size of a walnut.

Curry: Mix garlic and ginger in a hand mixer to a paste. Add coriander, cumin, paprika, cayenne bell pepper and salt. Heat oil in saucepan, add grated onions and fry until golden brown. Add spice paste and strained tomatoes and roast until the oil separates from the masala. Form the kofta balls into the curry mixture and baste evenly with yogurt. Set the temperature to low.

Shake cooking pot only gently at first. After about 5 min, you can stir gently. Sprinkle with garam masala and parsley before serving.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
