For the Mediterranean Couscous Salad, steam the couscous in 400 milliliters of soup until soft and let cool.

Sauté finely chopped onion and diced zucchini in olive oil and add to couscous. Finely chop garlic and herbs, coarsely chop arugula, dice mozzarella, pit and chop olives. Chop the pickled tomatoes and add everything to the couscous. Season to taste with salt, pepper and herbs.

Refrigerate the Mediterranean Couscous Salad until ready to eat.
