The dish is called in Chinese “Yuxiang qiezi” which means Melanzane with fish or fish flavor smell.

Do not be irritated if there is no fish on the ingredient list and the whole dish does not taste like fish. It is simply called that!

Rinse the melanzane, remove the stems. Cut into slices, then into lozenges or possibly chunks. Soak in cold water for 1/2 hour to remove the bitter taste.

Dry the pieces of eggplant thoroughly with a dish rag and fry them in very hot oil in a wok.

Stir soy sauce, sugar, vinegar and perhaps glutamate to make a sauce and set aside.

In a wok, heat 2 tbsp oil and sauté the garlic, leek and ginger. Once this mixture begins to smell strong, add the minced pork to- form and roast until crumbly. Drizzle with rice wine. Add the fried melanzane and the sauce. Stir-fry quickly so that the flavor is evenly distributed.

Serve immediately with white long grain rice cooked without salt.
