For the melanzani with yogurt, in a saucepan, fry mustard seeds in oil until they crackle. Add chilies and onion and fry until onion is soft. Stir-fry the melanzani for a few minutes, then add chili seasoning, tomatoes, salt and garam masala, stir properly and add the water.
Cover and cook on stove until tomatoes and melanzani can be mashed to a pulp. Let cool. Add yogurt and half of the cilantro greens. Sprinkle melanzani with yogurt with the remaining coriander greens and serve.
