Instructions:

1. Pour sesame seeds and almond kernels into a wide heavy-bottomed saucepan. Toast, stirring and turning throughout, at high temperature initially, when the seeds turn slightly yellowish, continue toasting over medium heat until sesame seeds and almond kernels are light brown, which will take 20-half hours. Immediately pour into a large baking bowl to cool. Spread a large board or tray with a large sheet of parchment paper.

2. pour honey into a saucepan and make over medium heat, stirring throughout, until it thickens after about 20 min. To test, drop 1 tsp of honey into a glass of cold water, wait briefly, then check with two fingers. If the honey feels like soft chewing gum or if it pulls threads between the fingers, it has the right consistency. Otherwise, continue to make the honey.

Cool the surface slightly and dust with a tiny bit of cinnamon. Roll out the still hot amount into a 1 1/2 cm thick rectangle, pressing firmly.
