For the melon Aperol punch, hollow out the watermelon with a ball piercer, dress the pulp with Aperol and chill. (Usually the day before).

Pour the pickled pulp into the hollowed out watermelon. Mix orange juice, soda water, cane sugar, vanilla and cinnamon and pour over fruit balls just before serving.

Garnish with sliced lemons and mint.
