Instructions:

Cut melons into quarters, remove seeds, cut flesh from peel and cut into cubes. With balsamic vinegar, mint, sherry vinegar, orange and juice of one lemon in a high mixing bowl form and finely mash. Season with sugar, salt, pepper and Tabasco. Cool for at least 1 hour.

Serve with mint leaves.
