For the Mexican brunch, sauté the finely chopped garlic and onion in a little oil and fry the beans in it.

Deglaze with white wine vinegar and either finely puree or coarsely blend according to taste.

Put about 2 – 3 tablespoons on a tortilla. Garnish with grated cheese, tomatoes, sour cream, avocado chunks, a fried egg, lots of fresh cilantro and some chopped hot chili. Sausage tigers can also add grilled chorizo on top.

Mexican brunch also makes a great hangover dish.
