For the Mexican couscous salad, cook the couscous according to package directions. Then mix with the corn mixture (e.g. Mexico Mix) and the juice of one lemon.

Cut the avocado in half, remove the pit and dice. Mix into the couscous with pressed garlic and chopped parsley.

Season the Mexican couscous salad with salt and pepper and serve.
