For the minced puff pastry strudel with potato gröstl, first boil the potatoes until soft. Then peel and cut into slices. If fresh vegetables are used, wash, peel and chop them if necessary. Peel and finely chop the onion. Heat some oil in a pan and sauté the onion until translucent. Add sliced potatoes and vegetables. Fry and put aside.

Soak the bread cubes in a little milk. Hard boil the eggs, peel and finely dice. Finely chop the gherkins. Mix the bread cubes, eggs, gherkins, minced meat and spices.

Roll out the puff pastry and spread the filling on it. Roll up and bake in the preheated oven at 180 °C according to package instructions until crispy.

If necessary, briefly heat up the Erdäpfelgröstl again. Arrange minced puff pastry strudel with potato gröstl and serve.
