For the minced beef zucchini pan à la Doris, first coarsely chop the onions, briefly warm 1 tablespoon olive oil, spread in the pan with a kitchen towel, fry the onion until golden, add the minced beef, season with salt, colored bell pepper and paprika and fry.

Then add zucchini, carrots and peppers and add beef or vegetable soup to taste. (I had a strong vegetable soup left over from the day before and used about 1 liter of it). Steam on medium heat until al dente (do not boil).

Whisk the eggs with the garlic cloves and fresh herbs (marjoram, basil, oregano) and stir in. Finally, cut the tomatoes into not too thin slices and stir them in as well. Allow to stand for a few minutes before pouring into the pan.

Finally, slice 2-3 scoops of mozzarella and cover the whole pan with it. Bake the minced zucchini pan à la Doris in the oven for about 7-10 minutes.
