Instructions:

For the minestrone, peel the potatoes and cut into small cubes. Cut the onion into small cubes and the leek into fine rings. Peel the carrots and cut into small cubes, also cut the zucchini into small cubes.

Heat oil in a pot and fry onion and leek in it. Add potatoes and sauté for about 5 minutes. Add zucchini, carrots and tomatoes.

Add water, vegetable soup and pasta and cook on low heat for about 15 minutes until pasta is soft (vegetables should still have some bite).

Season with salt and pepper. Serve the minestrone sprinkled with Parmesan cheese.
