Minestrone Ticinese – Ticino Vegetable Soup

Finely chop the vegetables and sauté in olive oil with chopped onions, pressed garlic and diced bacon until soft. Add tomato puree, steam and fill up with soup.

Cook for about 30 minutes.

Add white beans and finely chopped potatoes, lightly simmer for another 20 min. Season the minestrone with salt and pepper and finally with the chopped herbs. Serve with grated Sbrinz or Parmesan cheese.

Instead of soup, you can also use water and simmer a beef shank and a calf’s foot.
