Instructions:

For the Minute Steaks in Parmesan with fried spinach leaves, first prepare the steaks. To do this, season the meat on both sides with salt and pepper and roll in Parmesan. Press the parmesan lightly.

Heat 5 tablespoons of olive oil in a pan and sear the steaks rolled in Parmesan on both sides for about 1 minute.

For the spinach leaves, wash the spinach well and pat dry. Pluck mint leaves from the stems. Heat 4 tablespoons olive oil in a pan and add spinach and mint.

Toss once briefly and season with salt and pepper. Empty onto a kitchen towel and drain.

For the quick lemon mayonnaise, mix mayonnaise with grated lemon zest, two tablespoons lemon juice, and the chopped parsley and season with salt and pepper.

For the thick fries, wash potatoes well, cut into quarters, place on a baking sheet and drizzle with 10 tablespoons of olive oil. Add salt, pepper and thyme and stir everything well. Bake at 160 degrees convection for about 30-40 minutes.

Arrange the minute steaks in parmesan with fried spinach leaves and the thick fries and serve with the lemon mayonnaise.
