Instructions:

Whisk flour, starch and baking powder, sift onto a baking board and whisk with the cheese. Make a hollow in the center, pour in the egg whites, egg, spices, 1/2 egg yolk and liquid and make a thick paste with some of the flour. On top of it form the cold fat cut into pieces, cover it with flour and from the center quickly knead all the ingredients together until a smooth dough.

If it sticks, leave it to cool for a while. Divide the dough into 6 pieces on the spot and make one of each of the following cookies.

Cheese cookies Roll out the dough thinly. Cut out cookies with a round mold and place them on a baking sheet. Brush them with beaten egg yolk, prick twice with a fork and sprinkle with a little salt or caraway seeds.

Ring pastry Roll out the dough thinly and cut out rings. Place them on a baking tray, brush with beaten egg yolk and sprinkle with poppy seeds.

Cheese balls Make thumb-thick rolls from the dough, cut them into even pieces and press a small indentation into each one (e.g. with a baking aroma flake). Place the balls on a baking tray, brush with beaten egg yolk and form a little bit of parmesan cheese in the bulge.

Pretzels Shape the dough into thin rolls (thinner than pencils), cut 15 cm long pieces and put them into pretzels. Brush them with beaten egg yolk and place them on a baking sheet. Some of the pretzels of your choice
