Instructions:

For the mocha foam, bring milk to a boil and then add the coffee.

Place the yolks with the sugar in a bowl and whisk until a creamy mixture is formed. Stir in the hot coffee milk.

Now pour into a saucepan and let sit, stirring, until the cream sticks to the wooden spoon. However, the cream should not boil! Then remove from heat and continue stirring for another minute.

Mix the cornstarch with the cognac and add to the cream. Place back on the stove over low heat and continue stirring until the cream thickens.

Now fill the mocha foam into bowls and place in the refrigerator until cooled.
