Makes a cake of about 16 pieces 1. Finely grind 4/5 of the nuts. Separate the eggs. Beat egg whites, one-third of the coffee powder, enough half of the sugar and salt until stiff. Stir in egg yolks. Fold in ground nuts.

Spread the dough in a cake springform pan (26 cm Ø) lined with parchment paper on the bottom. Bake in a heated oven (electric oven: 175 degrees / convection oven: 150 degrees / gas: level 2) for 3035 minutes. Cool well.

Rinse the plums, remove the seeds and cut into wedges. Boil the juice and 2/3 of the plums. Mix cornstarch and 3 tbsp water until smooth. Bind compote with it. Cool down a bit.

Cut the sponge cake in two. Close the edge of the mold around the bottom. Pour compote on top. Place 2nd base on top. Leave to cool for about 1 hour. Whip 3/5 of the whipped cream, a quarter of the sugar, cream thickener and the remaining coffee powder until stiff. Put 2 tablespoons of it in a piping bag. Spread the remaining whipped cream on the base. 3. place the base on top.

Whip remaining whipped cream and sugar until stiff. Brush cake with it. Chop the rest of the nuts. Decorate cake with nuts, plums and whipped cream tuffs.
