Bake the cut melanzane in oil until done and pat dry. Put the minced meat, oil, onion, a quarter cup of parsley, water, tomatoes salt and pepper in a saucepan and make 45 min. Cover the bottom of a pan with the baked melanzane and add the minced meat mixture and half of the grated cheese. Top with the rest of the melanzane slices. Prepare 3 cups of bechamel sauce and add 2 egg yolks. Pour the sauce over the melanzane. Sprinkle the remaining cheese on top and bake for 50 minutes.
