For the mozzarella, bring fresh milk with salt to a boil, remove from heat. Mix in vinegar essence, the milk curdles on the spot.

Spread a sieve with a kitchen towel and pour the broth into it.

Then press the mozzarella into a ball with the kitchen towel and let it cool in the whey from the sieve.

Store the mozzarella in a bowl with a lid.
