Instructions:

Break open the cardamom capsules, remove the seeds and set aside. The capsule shells are waste. Crush cinnamon sticks into small pieces with a meat mallet or pasta walker. Grind all ingredients except nutmeg to a fine powder.

Stir in the ground nutmeg if desired.

Keep in a cool place in an airtight container.
