For the mulled wine and pear compote, thinly peel and squeeze the lemon and orange. Place the peels in a saucepan with the sugar and spices.

Boil for about five minutes until bubbly, stirring to dissolve the candy. Then strain the broth and put it in a saucepan.

Peel the pears and cut them in half or quarters, cook them in the broth until they are firm to the bite, not too soft.

Pour the mulled wine and pear compote into clean screw-top glasses.
