Instructions:

Mix eggs, milk and salt. Gradually stir in the flour and mix until a smooth dough. Let the dough rest for about 30 minutes.

Heat some butter in a large frying pan and fry two slices of bacon on both sides of each pancake. Pour a large ladle of batter into the skillet and swirl the skillet to distribute evenly.

When the bottom side of the pancake is golden, flip the pancake and bake the second side.

Note: During the cold winter months, when the work to be done on the farms of the Münsterland left time for visits to the neighbor, just as many a young lad took the opportunity to visit the house of his beloved under a more or less flimsy reason. Of course, the guest was invited to dinner, because a pancake was quickly prepared and, moreover, was an information carrier of a special kind: if the girl was unpleasantly surprised by the young man’s visit, he might well look for the bacon windows in his pancake, but if the young lady’s heart beat with affection, the boy’s eyes, if he even had an eye for the pancake, looked into at least six bacon windows.
