For the mushroom casserole, preheat the oven to 190°C degrees. In a large bowl, mix ham, parsley, breadcrumbs, Parmesan cheese, tomatoes, anchovy fillets and olive oil.

Season everything with pepper and salt. Clean the mushrooms and cut them in half (larger mushrooms in quarters) and place them in a baking dish. Pour the tomato sauce over them and bake the mushroom casserole in the oven for about 30 minutes.
