My Orange Flan

Instructions:

Put the sugar in a small saucepan with the water, bring to the boil and make until golden brown caramel is formed.

Pour this caramel into a baking dish.

Pour the milk as well as the whipping cream into a saucepan, add the grated orange zest, the vanilla sugar and the scraped out pulp of the vanilla bean as well as the pod and heat the whole thing until just before boiling point. Then place the saucepan in cold water and stir until the liquid is no longer hot.

Put a bowl of water (1, 3 liters) in the stove and preheat to 160 degrees.

Mix the eggs, egg yolks and sugar in a container with a whisk, but no foam should form. Pour in the milk mixture and stir. Pour the liquid twice through a hair sieve and then pour it on the caramel layer in the baking dish form.

Place the casserole dish in a hot water bath and cook for about 1 hour. Possibly another 10 minutes in the turned off stove.

Take out and cool. Then put in the refrigerator for one night. Turn out just before serving.

Serve with orange/grapefruit fillets and possibly a dollop of whipped cream.
