Anyway, we can still remember the time when negro kisses were one of our “favorite foods”. It’s not easy to make, but if you follow the instructions in detail, you’re sure to succeed. As a preparation, you should first melt together chocolate icing. You can also use ready-made cooking chocolate or cake glaze (you can buy it in the supermarket), which is then of course not as noble as the homemade.

And this is how it is done: 3 g gelatine in 10 g water to swell.

Whip the egg white with an electric mixer until creamy, not stiff. Heat the gelatine mixture in a bain-marie up to 70 °C and let it melt, do not whip until stiff. Make water and sugar in an open saucepan. Stir gently with a wooden spoon.

Check heat with a thermometer. The water must evaporate until the sugar solution is concentrated that it reaches 120 degrees – C.

With the electric mixer whip the snow and meanwhile the 120 degrees hot sugar solution on the spot from the pot run leisurely into the snow.

Old mix carefully and then add the dissolved gelatin while stirring.

Now stir by hand with a whisk until cold
