For the nettle quiche saute plucked nettle leaves in a little olive oil, add a little water and cook for about 10 minutes. Mix neatly with curd cheese, some lemon juice, 3 eggs and half of the grated Emmentaler. Season with salt, pepper and nutmeg.

Line a baking dish or tart springform pan lined with parchment paper with the puff pastry. The bottom and sides should be evenly covered. Pour in the nettle mixture. Sprinkle the remaining cheese on top.

Caution. The nettle mixture will rise during the baking process. Therefore, do not fill the pan completely.

Bake the nettle quiche in the oven at 180° C for about 30-45 minutes.
