This soup can be prepared only in the spring. The nettles must be young and soft. The potatoes are peeled and cut into thick slices, the nettles washed and coarsely chopped (use only the upper tips!). Now the potatoes are boiled in salted water for 10 min and poured onto a sieve. Now heat the butter in a saucepan, add the nettles and stew for 10 min. In the meantime, heat the clear soup and form it together with the pre-cooked potatoes to the nettles. everything together must simmer for another ten minutes. As soon as the potatoes are soft, strain the soup through a sieve, season with salt and pepper from the mill and add the sour cream.

Our tip: If you like to cook with fresh herbs, it is best to get kitchen herbs in pots – so you always have everything ready!
