Nettle spinach soup Make plenty of water in a saucepan with garlic and bay leaf spice for about 20 min. Add washed nettles and simmer for about 5 min. Cool the nettles and whisk them very well with the garlic and bay spice. Fill into rex glasses and keep them in the refrigerator.

Bring whipping cream to a boil. Whisk and finish seasoning with freshly grated nutmeg and salt.

Tip:

In a refrigerated rex jar, the nettle spinach will stay green and fresh for 1 week. You can use it just as an “alpine pesto” for spaghetti.

Our tip: It is best to use fresh herbs for a particularly good aroma!
