For the nut cake, whisk the egg whites with the sugar and vanilla sugar until fluffy, then carefully stir in the yolks.

Mix the breadcrumbs with the nuts and gently fold into the mixture. Pour into a greased Gugelhupfform and bake at 150 degrees convection oven for about 60 minutes.
