For the top cutlet, turn the veal cutlets in flour and pat down. Heat clarified butter in a large frying pan and sear the cutlets in it. After turning, season the seared side with salt.

Once the cutlets are just cooked through, remove from the pan and keep warm. Pour off excess fat from the pan. Whisk sour cream with the cornstarch and use it to cook off the drippings in the pan.

Season with salt, pepper, Worcestershire sauce and sugar. Bring the sauce to the boil again and pour over the cutlets. When serving, garnish with parsley and lemon wedges.
