Rinse octopus, rinse the body cavity well. Cut out the mouth opening that can be seen between the tentacles on the underside.

Cut octopus into 3 to 5 cm wide pieces.

Peel and halve the onions and cut them into strips. Peel and finely chop the garlic.

Blanch the fresh tomatoes, remove the skin and seeds and cut the canned tomatoes into small pieces.

Heat the olive oil in a wide pan. Fry the pieces of octopus. When they are reddish brown, add the onions, garlic and bay leaf, sauté for 10 to 15 minutes.

Add the tomatoes and fold in the wine. Cover and steam at low temperature for 1 hour. Season with salt, plenty of pepper and the vinegar.
