Cut smoked salmon into strips.

Mix eggs with salt, pepper and crème fraîche. Heat half of the clarified butter in a frying pan and pour in half of the egg mixture. Cook on medium heat until stiff and form an omelet. Cook a second omelet in the same way. Spread salmon strips and caviar evenly on top.

Sparkling wine breakfast, be served.
