For the onion jam, peel the onion and cut it into 1-2mm wide rings. In a sealable container, mix the onion rings with honey, brown sugar and apple-aronia juice and leave in the refrigerator for several hours.

It is best to keep shaking the container or stirring the onion mixture. Then put the onion rings including the marinade in a pot, chop the thyme sprigs and add them.

Simmer and add the balsamic vinegar, cumin powder, salt and the cloves. Keep stirring until you get a thickened consistency. Now add the chopped blue raisins and simmer for about 5 minutes more.

Pour the hot onion jam into screw-top jars, close tightly and let cool with the lid down. Goes perfectly with grilled meat or even cheese!
