For the onion meat, cut the onions into rings and fry in plenty of fat. Stir in the paradeisermark, roast well and slowly deglaze with red wine. Let it boil down darkly and pour in soup. Season with salt, pepper, bay leaf and marjoram and simmer for 30 minutes.

Cut meat into cubes, season with salt and pepper and fry quickly all around in a little fat. Add to juice and simmer, covered (or in the oven), until slowly tender, about 90 minutes.

If necessary, bind the juice with a little flour mixed in red wine before serving and serve the onion meat.
