Clean the carrots, peel the shallots, slice the peel of the untreated orange very (!) thinly, halve the vanilla pod lengthwise. Squeeze the oranges.

Boil 0.25 liters of water with vanilla bean, orange juice, orange peel, salt, sugar and pepper. Soften the carrots in about 15 to 20 minutes. After 5 minutes add the shallots and after 10 minutes the chili peppers. Cut the soft carrots into quarters lengthwise and into sticks about 4 cm long. Cut the shallots into quarters as well. Soak the vegetables in the broth for about 24 hours.
