Orange ice cream:







Instructions:

Cut the oranges – untreated, of course – with the peel into thin slices.

Boil the water with the sugar. Pour in the orange slices and leave to simmer for 30 minutes. Take out and cool.

Add the orange and lemon peel and the orange juice to the syrup form and boil the whole thing to 1 1/2 dl (based on 8 servings).

Beat the yolks until creamy. Pour in the hot syrup while stirring and continue beating until a thick cream is formed. Cool.

Whip the cream until stiff and fold into the orange cream with the orange liqueur.

Line a gratin dish with plastic wrap to start, then with the cooked orange slices. Cut the remaining orange slices into small cubes and mix them with the ice cream mixture. Pour this in and deep freeze.

To serve, place the mold very briefly in hot water, then invert the charlotte onto a plate and remove plastic wrap.
